  • 2-3 fresh lemongrass stalks
  • 1-inch piece of fresh ginger
  • 10-12 fresh mint leaves
  • 1 tablespoon lime juice
  • 1 tablespoon simple syrup or honey
  • Soda water or sparkling water
  • Ice cubes
  • Lime wedges and mint sprigs (for garnish)


  1. Trim the lemongrass stalks and remove the tough outer layers. Cut the lemongrass into small pieces.
  2. Peel and grate the ginger to extract its juice.
  3. In a glass, muddle the lemongrass pieces, grated ginger, and mint leaves together until fragrant. Use a muddler or the handle of a wooden spoon.
  4. Add lime juice and simple syrup (or honey) to the glass. Stir well to combine the ingredients.
  5. Fill the glass with ice cubes, leaving some space at the top.
  6. Top off the glass with soda water or sparkling water.
  7. Give the drink a gentle stir to mix the flavors.
