Ingredients
- 2 ripe apricots
- 1/2 lemon (juiced)
- 1 tablespoon simple syrup or agave syrup
- Club soda or sparkling water
- Ice cubes
- Apricot slices and lemon wedges (for garnish)
Instructions
- Cut the apricots in half, remove the pits, and chop them into small pieces.
- In a blender or food processor, combine the chopped apricots, lemon juice, and simple syrup/agave syrup.
- Blend the mixture until smooth and well combined.
- Strain the mixture through a fine-mesh sieve to remove any solids or pulp.
- Fill a glass with ice cubes.
- Pour the strained apricot mixture over the ice, filling the glass about halfway.
- Top off the glass with club soda or sparkling water.
- Stir gently to mix the ingredients together.
- Garnish the glass with apricot slices and lemon wedges.
